The brand that brings the classic banitsa back into fashion

The time for banitsa is back. Not that typical childhood snack, bought in a hurry due to lack of choice, but banitsa as a ritual – with the aroma of butter, the sound of a crispy crust and a taste that brings back memories of the table. “Thracian Banitsa” is the brand that has set itself the ambitious mission of returning this classic Bulgarian snack to where it belongs, in the hands of young people.

It all started with a small family bakery in Nessebar and gradually the idea spread to other cities in Bulgaria. The first location in Plovdiv opened its doors at the beginning of this year, and just six months later the network already has five locations and new partners ready to join.
In the locations, the rising itself and the final baking take place on site, in front of the customers, which brings that feeling of home cooking, familiar from grandmother’s afternoons.

The assortment is displayed in a showcase behind glass, the main focus is on classic products, complemented with new ideas for modern snacks. Among the offerings are: classic banitsa, banitsa with spinach, Thracian banitsa with a characteristic way of rolling, the popular myth with sausage and the new series of whole grain snacks, tailored to current food trends. The snacks are larger in weight than the standard ones on the market, because banitsa should be a pleasure, not a compromise.

The business model is created to be modern and convenient: the sites are equipped with POS terminals and are designed so that customers do not go inside – the service is provided through a single counter, quickly, conveniently and with a friendly atmosphere, a system for loyal customers operates, and feedback plays a key role for any subsequent improvement. The rising itself and the final baking of the snacks also take place on site. “Thracian Banitsa” works actively with local partners with the aim of jointly developing and offering products such as boza and ayrian.
The story also has its industrial background: the company has been behind the production and distribution of frozen snacks and baked goods for more than 30 years, proving high standards in quality, safety and technology. The workshop uses machines for part of the production process, but each snack is shaped by hand to preserve the authentic taste and texture.

Today, “Trakiyska Banitsa” revives a tradition and turns it into something modern, affordable and proudly Bulgarian.
